บทคัดย่อ

รถขายอาหารเป็นส่วนหนึ่งของธุรกิจอาหารริมทางซึ่งเป็นห่วงโซ่เศรษฐกิจระดับฐานรากที่มีความสำคัญ ผู้ใช้รถขายอาหารต้องเผชิญกับผลกระทบจากสภาพแวดล้อมริมทาง เช่น ความร้อน ฝุ่นละออง และเสียงรบกวนเป็นประจำ ซึ่งกระทบต่อสุขภาพ ดังนั้นรถขายอาหารที่ช่วยลดผลกระทบต่อสุขภาพจากสภาพแวดล้อมจึงมีความจำเป็นต่อผู้ประกอบการ งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาข้อมูลการเปลี่ยนแปลงของสิ่งแวดล้อมในปัจจุบันที่ส่งผลกระทบต่อผู้ใช้งานไปสู่แนวคิดการออกแบบรถขายอาหารเคลื่อนที่และเปรียบเทียบคุณภาพสิ่งแวดล้อมภายใน ระหว่างต้นแบบรถขายอาหารในโครงการรูปแบบปิดพื้นที่และรถขายอาหารที่นำมาร่วมทดสอบรูปแบบเปิดพื้นที่ โดยเป็นการทดลองภาคสนามและเก็บข้อมูลเชิงปริมาณมีตัวแปรตาม ได้แก่ อุณหภูมิ ความชื้น ปริมาณฝุ่น (PM 2.5) และความดังของเสียง พื้นที่การวิจัยริมทางถนนนครอินทร์ บริเวณสะพานพระรามห้า จังหวัดนนทบุรี เก็บข้อมูลระยะเวลา 14 ชั่วโมง การวิเคราะห์ข้อมูลใช้ ค่าความถี่ ค่าเฉลี่ย และค่าเบี่ยงเบนมาตรฐาน และการทดสอบทางสถิติใช้การวิเคราะห์ความแปรปรวน


ผลการวิจัยพบว่า ต้นแบบรถขายอาหารที่พัฒนาขึ้นมีสภาพแวดล้อมภายในที่เหมาะสมกว่ารถขายอาหารรูปแบบทั่วไปที่นำมาร่วมทดสอบ โดยมีอุณหภูมิภายในเฉลี่ยต่ำกว่า (31.6 °C เทียบกับ 36.6 °C) ความชื้นสัมพัทธ์อยู่ในช่วงที่เหมาะสมกว่า (31.9–66.2% เทียบกับ 28.3–70.2%) มีปริมาณฝุ่นละออง PM2.5 ภายในเฉลี่ยต่ำกว่า (25.0 µg/m³ เทียบกับ 27.7 µg/m³) และมีระดับเสียงภายในเฉลี่ยต่ำกว่า (81.7 dB(A) เทียบกับ 85.9 dB(A)) ผลจากการวิจัยจะนำไปสู่การพัฒนาต้นแบบรถในโครงการต่อไป
