บทคัดย่อ

ที่มาและวัตถุประสงค์: ธุรกิจร้านอาหารขนาดเล็กมีบทบาทสำคัญต่อการขับเคลื่อนเศรษฐกิจระดับภูมิภาคโดยเฉพาะในจังหวัดเชียงใหม่ ซึ่งเป็นหนึ่งในเมืองท่องเที่ยวสำคัญของประเทศไทย การได้รับตราสัญลักษณ์มิชลินสามารถเสริมสร้างความน่าเชื่อถือและยกระดับภาพลักษณ์ของธุรกิจในระดับสากล ส่งผลเชิงบวกต่อยอดขายและความสามารถในการทำกำไรของธุรกิจ งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาส่วนประสมทางการตลาดบริการของร้านอาหารขนาดเล็ก ที่ได้รับตราสัญลักษณ์มิชลินในจังหวัดเชียงใหม่ เพื่อให้ผู้ประกอบการธุรกิจร้านอาหารขนาดเล็กสามารถนำผลการวิจัยไปใช้เป็นแนวทางในการปรับปรุงพัฒนาธุรกิจ อันจะส่งผลให้สามารถอยู่รอดในภาวะเศรษฐกิจถดถอยได้
ระเบียบวิธีการศึกษา: การวิจัยนี้เป็นการวิจัยเชิงคุณภาพ ดำเนินการสัมภาษณ์แบบเจาะลึกรายบุคคลกับผู้ประกอบการร้านอาหารขนาดเล็กที่ได้รับตราสัญลักษณ์มิชลินในจังหวัดเชียงใหม่ ระหว่างปี พ.ศ. 2566-2568 จำนวนทั้งสิ้น 8 แห่ง
โดยคัดเลือกร้านแบบเฉพาะเจาะจงตามเกณฑ์ที่กำหนด เครื่องมือที่ใช้ในการเก็บข้อมูล คือ แบบสัมภาษณ์แบบกึ่งโครงสร้าง ซึ่งผ่านการตรวจสอบความตรงเชิงเนื้อหาและความเหมาะสมของภาษาโดยผู้ทรงคุณวุฒิ จากนั้นดำเนินการเก็บข้อมูลภาคสนามในเดือนเมษายน พ.ศ. 2568 วิเคราะห์ข้อมูลด้วยวิธีการวิเคราะห์เนื้อหาเชิงคุณภาพ ร่วมกับการวิเคราะห์เชิงพรรณนา
ผลการศึกษา:  ผลการวิจัยพบว่าร้านอาหารขนาดเล็กที่ได้รับตราสัญลักษณ์มิชลินในจังหวัดเชียงใหม่ส่วนใหญ่ดำเนินธุรกิจในลักษณะเจ้าของคนเดียว ไม่มีสาขา สืบทอดกิจการจากรุ่นสู่รุ่น ในด้านอาหาร ร้านส่วนใหญ่จำหน่ายอาหารจานเดียวมื้อเช้าและกลางวัน จำหน่ายเมนูอาหารท้องถิ่น ได้แก่ ข้าวซอย และขนมจีนน้ำเงี้ยว โดยใช้ทั้งสูตรดั้งเดิมที่สืบทอดจากบรรพบุรุษ และพัฒนาปรับปรุงสูตรด้วยตนเอง กำหนดราคาบนพื้นฐานต้นทุนวัตถุดิบและกำลังซื้อของลูกค้า เริ่มต้นหน่วยละ 30 บาท สูงสุดไม่เกิน 100 บาทต่อหน่วย ด้านช่องทางการจัดจำหน่าย ร้านตั้งอยู่บนถนนสายรอง มีบริการนั่งทานที่ร้านและซื้อกลับบ้าน รวมถึงสั่งอาหารผ่านแอปพลิเคชัน ในด้านการส่งเสริมการตลาด ร้านส่วนใหญ่ใช้เฟซบุ๊กเป็นช่องทางหลัก และได้รับการรีวิวผ่านสื่อออนไลน์ รวมถึงมีการให้บริการฟรี เช่น น้ำดื่ม น้ำแข็ง ผักสด ของหวาน ด้านบุคลากร พบว่ามีจำนวนบุคลากรที่ปฏิบัติงานน้อยที่สุด 3 คน สูงสุดไม่เกิน 14 คน ประกอบด้วยสมาชิกในครอบครัว เครือญาติ และลูกจ้าง บริหารจัดการแบบยืดหยุ่น มีการจ่ายทั้งค่าตอบแทนและสวัสดิการ ด้านกระบวนการให้บริการ ร้านมีการกำหนดวันและเวลาเปิดปิดที่แน่นอน มีรูปแบบการชำระเงินทั้งก่อนและหลังรับประทานอาหาร สามารถชำระเป็นเงินสดหรือโอนผ่านระบบอิเล็กทรอนิกส์ สำหรับด้านสภาพแวดล้อมทางกายภาพ ร้านเน้นการตกแต่งเรียบง่าย ให้ความสำคัญกับความสะอาด ความสะดวก และการใช้พื้นที่อย่าง มีประสิทธิภาพ
บทสรุป: เมื่อร้านอาหารขนาดเล็กที่ได้รับตราสัญลักษณ์มิชลินในจังหวัดเชียงใหม่ สามารถออกแบบ ปรับปรุง และประยุกต์ใช้ส่วนประสมทางการตลาดบริการให้สอดคล้องกับสภาพสังคมและเศรษฐกิจที่เปลี่ยนแปลงได้ ย่อมส่งผลโดยตรงต่อชื่อเสียง ความอยู่รอด และความสามารถดำเนินธุรกิจอย่างยั่งยืน
