The Development of Local Learning Curriculum in the Learning Area of Occupations on the Topic of Chinese Bun (Sala-pao) for Grade 8 Students

Abstract

       The objectives of this research were 1) to develop a local learning curriculum on the topic of “Chinese Bun” in the learning area of occupations, 2) to compare students' the knowledge and understanding scores before and after having undergone with the local learning curriculum on the topic of “Chinese Bun”, 3) to study students’ skill on making Chinese buns after having undergoing the local learning curriculum on the topic of “Chinese Bun”, and 4) to study the students’ satisfaction towards the local learning curriculum on the topic of “Chinese Bun”. Selected through cluster random sampling, the samples were 8 grade-eight students who were studying in the second semester of academic year 2024 of Wat Sao Cho Ngok School. The research tools were 1) the local learning curriculum on the topic of “Chinese Bun”, 2) knowledge and understanding test, 3) evaluation instrument on skills, and 4) the satisfaction questionnaire towards learning.  The data analysis was conducted through average, standard deviation and Wilcoxon signed-rank test.

       The findings were as follows;1) The elements of the local learning curriculum on the topic of “Chinese Bun” in the learning area of occupations for grade-eight students consisted of  (1) principle, (2) objectives,  (3) structure, (4) scope of content, (5) period of study, (6) lesson plan, (7) learning materials and sources, and (8) learning measurement and evaluation. All the elements were assessed by the experts.  The overall quality was at the highest level with a mean score of (x̄=4.59, SD=0.54) 2) Students’ post-learning knowledge and understanding scores were significantly higher than their pre-learning at the .05 statistical significance level. 3) After the curriculum implementation, students achieved an 88.67 competency in skills for Chinese bun 4) Student satisfaction with the local learning curriculum on Chinese bun was at the highest level, with a mean score of (x̄=4.54, SD=0.26)
