Local foods’ wisdom in central region (Phra Nakhon Si Ayutthaya, Nonthaburi and Suphan Buri provinces)

Abstract

          The research on the wisdom of local foods in central region (Phra Nakhon Si Ayutthaya, Nonthaburi and Suphanburi province) aimed to 1) analyze and synthesis the local foods’ wisdom in central region and 2) study people perception on local foods in the central region in Phranakhon Si Ayutthaya, Nonthaburi and Suphanburi province. The target data contributors were the 600 local scholars in Phra Nakhon Si Ayutthaya, Nonthaburi and Suphanburi province. The instrument to collect data was a summary of group discussion, analyzing quantitative data questionnaires by frequency, percentage and qualitative analysis using content analysis technique. The result found that:

          1) The local food of Phra Nakhon Si Ayutthaya Province consists of 41 savory dishes, 6 snacks and 30 desserts. The local food of Nonthaburi province consists of 11 savory dishes, 3 snacks and 10 desserts. The local food of Suphanburi province consists of 37 savory dishes, 4 snacks and 22 desserts.

          2) Local food according to perception and importance of people in Phra Nakorn Si Ayutthaya province consisted of grilled river prawns as savory dish, Khanom Bueng as snack and Khanom Ba-bin as dessert. The local food according to perception and importance of people in Nonthaburi province consisted of fried spinach fishcake as savory dish, Mieng-Kum as a snack and sweet palm kernels as dessert. The local food according to perception and importance of people in Suphanburi province consisted of Kaeng-Som Ma-rum as savory dish, Phad Thai as snack and Piak-phoon as dessert.
