การพัฒนาเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น

Abstract

บทคัดย่อ

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อศึกษาความต้องการจำเป็นในการพัฒนาเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น เพื่อออกแบบและสร้างเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น เพื่อหาประสิทธิภาพการใช้งานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น  และเพื่อศึกษาความพึงพอใจของผู้ใช้เครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น ประชากรที่ใช้ในการวิจัย คือผู้ประกอบการการผลิตลูกชิ้นหรือผู้ทดลองใช้เครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นในจังหวัดกำแพงเพชร จำนวน 10 ราย ผู้เชี่ยวชาญจำนวน 5 ราย เครื่องมือที่ใช้ในการวิจัยคือแบบสอบถามแบบ จำนวน 3 ชุด สถิติที่ใช้ในการวิเคราะห์ข้อมูล ได้แก่   ค่าร้อยละ ค่าเฉลี่ย ค่าส่วนเบี่ยงเบนมาตรฐาน และการวิเคราะห์เนื้อหา

ผลการวิจัยพบว่า

1.  ความต้องการจำเป็นในการพัฒนาเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น โดยรวมอยู่ในระดับมากที่สุด เมื่อพิจารณาเป็นรายด้าน พบว่าด้านที่มีค่าเฉลี่ยสูงสุด ได้แก่ ด้านคุณสมบัติในการทำงานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น รองลงมา ด้านกายภาพของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น และด้านสภาพการทำงานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น

2.  การออกแบบและสร้างเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น ได้ออกแบบตรงความต้องการจำเป็นของผู้ประกอบการโรงงานลูกชิ้นในจังหวัดกำแพงเพชร โดยผู้วิจัยได้สำรวจข้อมูลความต้องการจำเป็นจากผู้ประกอบการ ทำให้ทราบความต้องการของผู้ประกอบการที่ต้องการให้มีเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นที่มีคุณลักษณะทั้ง 3  ด้าน

3.  ประสิทธิภาพการใช้งานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นโดยรวมอยู่ในระดับมากที่สุด เมื่อพิจารณาเป็นรายด้านพบว่า ด้านที่มีค่าเฉลี่ยสูงสุด ได้แก่ ด้านคุณสมบัติในการปฏิบัติงาน รองลงมาด้านสภาพการทำงาน ด้านคุณสมบัติทางภายภาพ และด้านการผลิตและการประกอบเครื่อง เมื่อทดลองการตัดเนื้อเพื่อการผลิตลูกชิ้นเปรียบเทียบโดยคนตัดชิ้นเนื้อและใช้เครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น จำนวน 5 ครั้ง คนสามารถตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นได้โดยเฉลี่ย 56.40 กก./5 นาที การตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นโดยเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น จำนวน 5 ครั้ง เครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นได้โดยเฉลี่ย 331.80 กก./ 5 นาที จากการศึกษาประสิทธิภาพในการทำงานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นเมื่อเทียบการทำงานแล้วพบว่าเครื่องสามารถตัดชิ้นเนื้อได้มากกว่าคนเป็น 5.9 เท่า คิดเป็นร้อยละ 588.30

4.  ความพึงพอใจของผู้ใช้เครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น โดยรวมอยู่ในระดับมากที่สุด เมื่อพิจารณาเป็นรายด้าน พบว่า ด้านที่มีค่าเฉลี่ยสูงสุด ได้แก่ ด้านกายภาพของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น รองลงมา ด้านสภาพการทำงานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้นและด้านคุณสมบัติในการทำงานของเครื่องตัดชิ้นเนื้อเพื่อการผลิตลูกชิ้น

ABSTRACT

The purpose of  this  research were 1) to  study  the  needs  of  the  development  of  meat  cutter  for  meatball  production  2)  to  design  and  build  meat  cutter  for  meatball  production  3)  to  find the efficiency of  meat cutter  for  meatball  production  4)  to study  users’  appreciation  for  meat  cutter for meatball  production. The samples consisted 10 people  who  used  meat  cutter  for  meatball production in Kamphaeng Phet and 5 experts. The research  instruments were questionnaire.  The data  were analyzed using the percentage, mean, standard deviation and content analysis.

The  research  findings  were  as  follows:

1.  In general, the needs of the development of meat  cutter for meatball production  was at the high level. When considered each aspect, the highest level was the aspect of meat  cutter’s  working  quality, physical  meat  cutter  and  working  condition  respectively.

2.  The designing and the construction of meat cutter for meatball production was  revealed that as the researcher surveyed for the  needs of consumers so the cutter would be  suitable  for  their  needs.  The consumers  wanted  all  three  aspects  of  meat  cutters.

3.  In general, the efficiency of meat cutter for meatball production was at the high level. When considered each aspect, the highest level were the aspect of meat cutter’s  in working quality, working condition, physical production and machinery composition  respectively. The  comparison of meat cutter were shown as follow: there were five times of cutting, men could cut  meat in an average of 56.40 kilograms per five minutes whereas the machine could cut meat in  an average of 331.80 kilograms per five minutes. The efficiency of meat cutter compared with  men for meatball production was found that the machine could cut 5.9 times than men, it was in  588.30  percent.

4. In general, the users’ appreciation for meat cutter for meatball production was at  the high level. When considered each aspect, the highest level were the aspect of meat cutter for  meatballs  production  in  physical, working  condition  and  working quality  respectively.
