Abstract

The present study focused on raising awareness of the environmental impact of food waste and approaches to reducing food waste in industrial plants. It aimed to 1) survey eating behavior before and after building an awareness campaign on food waste reduction in the canteen of industrial plants among the employees and 2) study the relationship between the eating behavior of employees in industrial plants and their demographic characteristics (gender, age, weight, and department). This study employed a mixed-methods approach consisting of 1) action research involving 40 employee volunteers who used the canteen services in industrial plants in Rayong province and 2) quantitative research involving 100 employee volunteers who used the canteen services in industrial plants in Rayong province. The results indicated that before implementing an awareness campaign on food waste reduction in the canteens, 28 employees finished their food, representing 70 percent, while 12 employees left some food uneaten, accounting for 30 percent. After the campaign, 36 employees finished their food, representing 90 percent, while only 4 employees left some food uneaten, accounting for 10 percent. In addition, the research results also pointed out that the food consumption behavior of employees in industrial plants was significantly associated with demographic characteristics in terms of gender, age, weight, and department, at the 0.05 significance level. The results of this study can serve as a model for other industrial plants to reduce food waste.
