บทคัดย่อ
งานวิจัยนี้มีวัตถุประสงค์เพื่อ (1) พัฒนาสูตรและกระบวนการผลิตน้ำพริกจากผลหม่อน (2) พัฒนาบรรจุภัณฑ์และฉลากสำหรับผลิตภัณฑ์น้ำพริกจากผลหม่อน และ (3) สำรวจความพึงพอใจของผู้บริโภคต่อผลิตภัณฑ์ที่ได้รับการพัฒนาแล้ว ผู้ให้ข้อมูลสำคัญในการพัฒนาสูตรและวิธีการผลิตอาหารโดยใช้วิธีวิจัยปฏิบัติการแบบมีส่วนร่วม ได้แก่ ประธานและสมาชิกกลุ่มฯ จำนวน 10 คน ผู้ทดสอบทั่วไปที่ชื่นชอบและคุ้นเคยกับผลิตภัณฑ์ จำนวน 30 คน ผู้ให้ข้อมูลสำคัญในการพัฒนาบรรจุภัณฑ์และฉลาก ได้แก่ ประธานและสมาชิกกลุ่มฯ จำนวน 10 คน ส่วนกลุ่มตัวอย่างในการสำรวจความพึงพอใจของผู้บริโภค คือ ผู้บริโภคทั่วไป จำนวน 200 คน ประธาน และสมาชิกกลุ่มฯ จำนวน 10 คน เครื่องมือที่ใช้ในการวิจัยเป็นแนวคำถามสำหรับใช้ในการสนทนากลุ่ม เพื่อสำรวจปัญหาและความต้องการ แบบประเมินคุณภาพทางประสาทสัมผัสโดยวัดเป็น 9 ระดับ และแบบสำรวจความพึงพอใจ วิเคราะห์ข้อมูลโดยการหาค่าเฉลี่ย และส่วนเบี่ยงเบนมาตรฐาน ผลการวิจัยพบว่าการปฏิบัติการแบบมีส่วนร่วมระหว่างผู้วิจัยและสมาชิกกลุ่มฯ ทำให้ได้ผลิตภัณฑ์น้ำพริกจากผลหม่อนที่ได้รับคะแนนความชอบจากผู้บริโภค อยู่ในระดับชอบมากถึงมากที่สุด การพัฒนาบรรจุภัณฑ์และฉลากของผลิตภัณฑ์ พบว่า ผลิตภัณฑ์มีภาชนะบรรจุที่สวยงามและมีรูปแบบเป็นไปตามความต้องการ และจากการสำรวจความพึงพอใจของทั้งกลุ่มผู้ผลิตและผู้บริโภคที่มีต่อผลิตภัณฑ์อาหารที่พัฒนาขึ้น พบว่า มีความพึงพอใจในระดับมากถึงมากที่สุด
