บทคัดย่อ
การวิจัยนี้มีวัตถุประสงค์เพื่อ1) ศึกษาการเรียนรู้เรื่องความยั่งยืนทางอาหารของเกษตรกร 2) ศึกษาแนวทางปฏิบัติด้านความยั่งยืนภายใต้อัตลักษณ์จากประสบการณ์ชีวิตของเกษตรกร เป็นการวิจัยเชิงคุณภาพ ใช้วิธีปรากฏการณ์วิทยาเชิงอัตถิภาวะนิยม มีเกษตรกรผู้ให้ข้อมูลหลัก 1 คน ผู้บริโภค 11 คน เลือกตัวอย่างแบบเจาะจง เก็บข้อมูลโดยการสัมภาษณ์เชิงลึก สังเกต ลักษณะท่าทาง สีหน้า และบริบทโดยรอบ จดบันทึก และศึกษาเอกสารที่เกี่ยวข้อง ผลการวิจัย วัตถุประสงค์ข้อ 1 พบว่า 1. การสร้างความตระหนักและรับรู้เกี่ยวกับความยั่งยืนทางอาหาร ประกอบด้วย 1) รับรู้ถึงประโยชน์ของการทำเกษตรอินทรีย์ 2) น้อมนำเอาหลักปรัชญาเศรษฐกิจพอเพียงมาใช้ 3) เห็นปัญหาของการทำเกษตรแบบดั้งเดิม 4) รับรู้เกี่ยวกับเทคโนโลยี 5) ทดลองปฏิบัติก่อนตัดสินใจ 2. การเรียนรู้ด้านความยั่งยืนทางอาหาร ประกอบด้วย เริ่มต้นด้วยการทำจริง มีความมุ่งมั่นตั้งใจจริง หาแนวทางแก้ไขปัญหา หาความรู้จากปราชญ์ชาวบ้าน ศึกษาแนวทางจำหน่ายสินค้า สร้างช่องทางจำหน่ายสินค้า สร้างความน่าเชื่อถือให้กับตัวเอง ปลูกพืชให้ดูเป็นตัวอย่าง ผลิตและจัดจำหน่ายผลิตภัณฑ์ที่ใช้ในการทำเกษตรอินทรีย์ แปรรูปผลผลิต และปลูกพืชผักแบบผสมผสาน วัตถุประสงค์ข้อ 2 ประกอบด้วย 1) แนวทางการปฏิบัติด้านความยั่งยืน พบว่า มีการผลิตครบทุกวงจรของความเป็นเกษตรอินทรีย์ รักษาและสร้างความเชื่อมั่นในคุณภาพสินค้า นำเอาเทคโนโลยีมาใช้ มีคุณธรรมและซื่อสัตย์ต่อลูกค้า เรียนรู้และพัฒนาอยู่ตลอดเวลา มีองค์ความรู้ในการทำเกษตรอินทรีย์อย่างแท้จริง 2) การสร้างเครือข่ายทางสังคม โดยการตั้งเป็นวิสาหกิจชุมชน สร้างเครือข่ายกับเจ้าหน้าที่ที่เกี่ยวข้องและเพื่อนบ้านคนในชุมชน เป็นสมาชิก สสว.(สำนักงานส่งเสริมวิสาหกิจขนาดกลางและขนาดย่อม 3) เกี่ยวกับวัฒนธรรมสังคม สร้างสายสัมพันธ์ที่ดีกับเพื่อนร่วมงาน ผู้รู้ปราชญ์ชาวบ้าน กัลยาณมิตร เพื่อนบ้านคนในชุมชน 4) ผู้บริโภคพืชผักอินทรีย์ มีความคาดหวังและพึงพอใจเกี่ยวกับคุณภาพสินค้าโดยตรง การมีสุขภาพและสภาพแวดล้อมที่ดี
