บทคัดย่อ
บทความวิจัยนี้มีวัตถุประสงค์เพื่อ 1) จัดทำคู่มือการจัดการความรู้เพื่อยกระดับผลิตภัณฑ์สับปะรดตลอดห่วงโซ่คุณค่าของกลุ่มวิสาหกิจชุมชนแปรรูปสับปะรดในจังหวัดประจวบคีรีขันธ์ และ 2) ประเมินผลคู่มือการจัดการความรู้เพื่อยกระดับผลิตภัณฑ์สับปะรดตลอดห่วงโซ่คุณค่าของกลุ่มวิสาหกิจชุมชนแปรรูปสับปะรดในจังหวัดประจวบคีรีขันธ์ กลุ่มตัวอย่างในการวิจัย ได้แก่ กลุ่มการจัดการความรู้ จำนวน 100 คน และกลุ่มนำผลสำเร็จของงานไปใช้ประโยชน์ จำนวน 5 คน เครื่องมือที่ใช้ในการวิจัย คือ แบบสอบถามและแบบประเมินคู่มือวิเคราะห์ด้วยสถิติค่าร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน และการวิเคราะห์เชิงเนื้อหา ผลการวิจัยพบว่า 1) ได้คู่มือการจัดการความรู้เพื่อยกระดับผลิตภัณฑ์สับปะรดตลอดห่วงโซ่คุณค่าที่มีเนื้อหาเกี่ยวกับ 1.1) การจัดการความรู้ในการปลูกสับปะรด เพื่อส่งเสริมเกษตรกรได้มีความรู้แบบรายบุคคลและแบบกลุ่ม 1.2) การบริหารจัดการสับปะรดเพื่อจำหน่ายผลสด เพื่อนำไปใช้ในการวางแผนการผลิต และเก็บเกี่ยวผลผลิตให้เหมาะสมกับความต้องการและกลไกทางการตลาด 1.3) การพัฒนาผลิตภัณฑ์จากสับปะรด เพื่อส่งเสริมให้ประชาชน มีความรู้ พัฒนาต่อยอดจากอาชีพเดิมสู่การสร้างอาชีพใหม่ และมีรายได้เพิ่มขึ้น และ 2) ผลการประเมินคู่มือการจัดการความรู้ โดยรวมมีความรู้ความเข้าใจในคู่มืออยู่ในระดับมาก และผลการนำคู่มือการจัดการความรู้ไปใช้ประโยชน์ โดยรวมอยู่ในระดับมาก
