Survey of Food Sanitation Conditions for Grading of Restaurant’s Standard in Hod District, Chiangmai Province
The objectives of this study were to inspect food sanitation and to rank restaurant standards by doing a survey in 65 restaurants in order to set up a plan to improve food sanitation in Hod district to meet the government standards. Coliform Bacterial Testing (SI-2) was used during this survey. The data and analysis were based on the descriptive surveying and using statistics methods of frequency, percentage, arithmetic means, standard deviation and data classification.
The study showed that 89.25% of restaurant owners had a high level of knowledge about the food sanitation. They agreed with the opinion that any people who are in contact with food should be aware of good sanitation. When they are preparing food for their consumers which will directly have an effect on the food sanitation. More than 50.78% of occupancies and restaurants conformed to the food standards and the regulations, except the case of employee’s annual health checking. The cleanliness of food, food containers, and the sanitation of 92.08% of the people incontact with food were passed the standards. But samples only 63.08% of the vegetables were passed the food cleanliness standard.
The survey of Food Standards in Hod District, Chiang Mai showed the follwoing : that 3 restaurants (4.61%) were at the excellent level, 13 (20.00%) were fair, 40 (61.54%) were moderate, and 9 (13.85%) needed to be improve. According to this fact of the survey, government local divisions have been creating plans that will help to educate, improve and adjust restaurant owners’ attitude towards understanding food sanitation which can upgrade Thai food and restaurant to the international level.
